Belfast: a grand hotel, then three different evenings
Belfast's Cathedral Quarter makes a food-led city break easy to enjoy on foot. You can have a French bistro dinner with live jazz, go around the corner for European cooking at Waterman, or spend the evening sharing Italian cicchetti and pasta at Coppi. The Merchant Hotel puts those plans within a compact area, with a notably grand place to return afterwards.
Our current priced Belfast shortlist contains one hotel with three dining pairings. The useful choice is therefore the evening, room style and facilities you want. For a wider hotel comparison, our Northern Ireland guide includes stays beyond the city.
Which Belfast evening would we choose?
- Best for dinner and live music: The Merchant with Berts Jazz Bar, for French bistro cooking and jazz under the same roof.
- Best for a chef-led neighbourhood bistro: The Merchant with Waterman, for Aaron McNeice's seasonal European-influenced cooking in Niall McKenna's Cathedral Quarter restaurant.
- Best for Italian sharing plates and plant-based choice: The Merchant with Coppi, with freshly made pasta and a dedicated plant-based menu.
- Best for a romantic hotel occasion: The Merchant, with the room style chosen deliberately: Victorian character or Art Deco interiors.
- Best for spa time in this shortlist: The Merchant, with a separately arranged spa experience and its distinct rooftop hot-tub facilities.
- Cheapest qualifying dinner comparison: Berts' Early Jazz pairing at £333 for two midweek, provided you dine Monday–Thursday between 5pm and 6.30pm.
The hotel: choose the room as carefully as the restaurant
The Merchant Hotel is a five-star Cathedral Quarter hotel with AA Red Stars, combining the original Victorian building with an Art Deco wing. We would choose it when the hotel is part of the celebration and you want to walk to dinner, rather than spend the stay travelling across the city.
The Victorian bedrooms have bespoke furniture, antique mirrors and large bathrooms with tub baths and rainfall showers. The Art Deco rooms provide a different aesthetic, with the majority having super-king beds, walk-in showers and large baths. For a romantic occasion, ask for the exact style and features that appeal to you. A suite or specific bath layout needs its own room quote.
The same recorded room-and-breakfast component underlies all three dining pairings: £260 midweek and £445 at the weekend. Much of the weekend increase therefore comes from the hotel, rather than from a more elaborate meal. An alternative date may make a bigger difference than changing restaurants.
Three dinner choices, compared
Berts Jazz Bar: the easiest complete evening
Berts is in The Merchant itself. Its one-AA-Rosette French bistro menu and live jazz make it our choice when dinner and music are the occasion. Sample à la carte dishes include French onion soup with beef cheek, Gruyère soufflé and beef bourguignon.
The three-course Early Jazz menu is currently £36.50 per person, with options including duck parfait, chicken cordon bleu and crème caramel. It runs Monday–Thursday, 5pm–6.30pm. That is the meal behind the £333 midweek guide total.
The catalogue's £518 weekend figure carries forward the same early-menu allowance, but that menu is not offered for Friday or Saturday dinner. Reprice the evening from the applicable menu. Later Friday and Saturday reservations, from 8.30pm, also attract a £10-per-person stage charge. We would choose Berts over Waterman for live music and dinner inside the hotel, then book the sitting that gives you the atmosphere you want.
Waterman Bistro: an independent food evening nearby
Waterman Bistro is on Hill Street, 0.1 miles from the hotel in our catalogue. Niall McKenna opened it in 2022, with Aaron McNeice leading the kitchen. Local seasonal ingredients meet European influences, including house-made pasta and cured pork, in an informal bistro setting.
The guide totals are £355 midweek and £540 at the weekend, using a representative £47.50-per-person dinner allowance. That buys a different evening from Berts' restricted early menu, with your actual order and wine priced separately.
Choose Waterman when you want to leave the hotel for a chef-led neighbourhood meal. It currently takes last bookings at 9.15pm Wednesday–Saturday and 8pm Sunday, with Wednesday–Thursday service starting at 5pm and Friday–Sunday at 1pm. It is closed Monday and Tuesday. Bistro bookings have a 90-minute allocation, so plan a drink afterwards elsewhere if you want to linger over the whole evening.
Coppi: Italian small plates, pasta and vegan options
Coppi, in St Anne's Square, is 0.2 miles from The Merchant in the catalogue. Andrea and Chef Tony O'Neill's restaurant takes inspiration from Venetian cicchetti bars, with contemporary Italian dishes and pasta made on site.
We would choose it for a sociable sharing-led dinner or when plant-based choices matter. Its plant-based menu includes potato-and-truffle agnolotti with almond cream and a celeriac arrabbiata dish. Check the menu available on your date, rather than assume every seasonal example will remain.
The £360 midweek and £545 weekend totals use a £50-per-person dinner allowance. Coppi opens Monday–Thursday from 4.30pm and Friday–Saturday from noon; it is currently closed on Sundays. That makes it useful for a Monday or Tuesday evening when Waterman is closed, but unsuitable for a Sunday dinner plan.
Best value: start with the night of the week
Berts' Early Jazz menu offers the lowest qualifying comparison, but the time restriction is part of the value. Waterman costs £22 more for two midweek and Coppi £27 more. We would let the cooking style and the evening you want determine whether that difference is worthwhile.
For Friday or Saturday, compare current Berts à la carte prices and any stage charge with the other restaurants. For Sunday, Berts and Waterman advertise dinner service, while Coppi is closed. Check any direct Merchant dining offer against the same room category, menu and booking date.
Indicative one-night costs for two
| Merchant dining pairing | Midweek | Weekend | Booking detail |
|---|
| Berts Early Jazz | £333 | Reprice | In hotel; £36.50 three-course menu Monday–Thursday, 5pm–6.30pm |
| Waterman Bistro | £355 | £540 | Separate restaurant, 0.1 miles; Wednesday–Sunday |
| Coppi | £360 | £545 | Separate restaurant, 0.2 miles; closed Sunday |
Spa, rooftop hot tub and a romantic afternoon
The Merchant's rooftop facilities include a gym, sauna, steam room and hot tub with city views. They are open to hotel guests and members, for over-18s. The hot tub closes for cleaning from noon–3pm on Monday, Wednesday and Friday; thermal facilities open later and close earlier than the gym.
The spa has its own hydro-pool, thermal loungers and treatment rooms. Arrange your preferred hydrotherapy session or treatment separately, and confirm access with the hotel. These are distinct facilities: the rooftop hot tub is not a swimming pool, and the room-and-dinner totals do not price a spa treatment.
For a romantic break, leave time for the room, a rooftop visit during its opening hours and dinner. A Victorian bedroom with Berts makes a particularly coherent hotel-centred occasion. Waterman or Coppi adds a walk through the Cathedral Quarter and a different kind of evening.
Is this a dog-friendly Belfast break?
The Merchant's published policy permits guide dogs with advance notice, rather than pet dogs. There is therefore no pet-friendly recommendation in this priced Belfast shortlist. If you are bringing a dog, use the dog-friendly deals page and confirm both bedroom and dinner arrangements before choosing the stay.
What do the guide prices include?
They combine one night's accommodation and breakfast for two adults with the recorded dinner menu or representative allowance. Waterman and Coppi require separate restaurant bookings. Berts also needs a table reservation, even though it is in the hotel. Drinks, service, stage charges, room upgrades and spa bookings change the total. Our comparisons do not establish an inclusive hotel package.
Make Belfast the right-sized city break
Keep the Cathedral Quarter evening free rather than fit distant attractions between hotel check-in and dinner. Spend an afternoon exploring central Belfast or plan a separate waterfront visit, then return in time for your chosen restaurant sitting. For an early Berts booking, that means being ready to eat by 6.30pm; a later jazz evening needs a different menu and budget.
